Specially Chosen Rice

My rice is grown in soil that I have enriched with as much compost as possible. The brand of rice I provide to Kagasuke is Hitomebore. In Shizukuishi, many farmers produce Akitakomachi, but I choose to grow Hitomebore because, in my opinion, it has a better flavor. The Hitomebore variety was originally produced in warmer areas, and used to be grown only to the south of Kitakami River's center. I began to grow Hitomebore 20 years ago, after obtaining the seeds from my sister who married a man in the Mizusawa area, and continue to produce rice for Kagasuke today.

Seasonal local vegetables

We source fresh local vegetables true to each of Shizukuishi's four seasons. Enjoy dishes prepared using plenty of blessings from the mountains, such as sansai (mountain vegetables) in the spring and mushrooms in the fall.
